Blueberry Squares Recipe

Traditional Newfoundland Blueberry Squares Recipe

3 tablespoons butter
1/3 cup sugar
2 egg yolks
2/3 cup sifted flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup milk
1/4 teaspoon vanilla

Cream butter and sugar; beat in the egg yolks. Add sifted dry ingredients alternately with the milk and vanilla. Pour into a greased 8-inch square pan. Bake at 350@ F. for 18 to 20 minutes.

2 egg whites
6 tablespoons sugar
1/4 teaspoon salt
1 cup fresh blueberries

Beat eggs until peaked; beat in sugar and alt. Fold blueberries into the meringue and spread over the baked cake portion. Return to a 300@ F. oven and bake until topping has browned slightly (12 to 15 minutes).
