Boiled Fruit Cake Recipe

Traditional Newfoundland Boiled Fruit Cake Recipe

2 cups dried fruit
1 tsp. allspice
1 tsp. coves
1 tsp. cinnamon
1/2 cup dark rum
1 tsp. of each almond and vanilla flavoring
2 cups cold water
1 cup butter
1 cup sugar
2 1/2 cups flour
2 tsp. baking soda
2 eggs
1 cup apple sauce

Boil fruit, allspice, cloves, cinnamon, rum, flavoring, and water. Cream butter and sugar, add eggs. Combine flour and baking soda, add to creamed mixture alternately with apple sauce. Add the boiled mixture. Pour into greased tube pan. Bake at 300F for two and half hours.
