Crab and Bacon Rolls Recipe

Traditional Newfoundland Crab and Bacon Rolls Recipe

1-5 oz. can crab meat, drained and flaked 1 tbsp. minced onion
1 tsp. lemon juice
1/4 tsp. salt
1/2 cup fine bread crumbs
2 tbsp. tomato juice
1 tsp. dried parsley flakes
1 egg, beaten
12 slices bacon, cut in half

In medium bowl, combine all ingredients except bacon. Mix thoroughly. Form into balls about 1 tablespoon each. Wrap bacon slice around each, securing with toothpick. Broil 4 inches from heat, turning frequently until bacon is crisp. YIELD: Twenty-four
