Old Fashioned Baked Beans Recipe

Traditional Newfoundland Old Fashioned Baked Beans Recipe

Recipe #1

2 lbs. dried beans
1 medium onion (sliced)
1/4 cup tomato ketchup
1 tsp. mustard
1/4 cup brown sugar
3/4 lbs salt pork (sliced)
1/2 cup molasses

Soak beans overnight.
The following morning wash beans and add enough water to come 2 inches above beans, boil until tender (about 30 min). Put in deep casserole mixed with other ingredients and then bake covered in oven at 250F for about 7 hours. When beans are tender (about 6 hours) remove 1 cup of beans and mash them up and then stir back in the mashed beans. To darken up the beans remove cover the last hour (Same time you add the mashed beans).

1 tbsp. Salt
4 tsp. cider vinegar
2 tbsp. brown suger
1 tsp. prepared mustard
1/2 cup regular molasses
1 cup ketchup
pinch of black peper
1/2 lb of bacon

Soak beans overnight.
The following morning wash beans and add enough water to come 2 inches above beans (about 10 cups), boil until tender (about 30 min). Put in deep casserole mixed with other ingredients and put the bacon on top and then bake covered in oven at 250F for about 7 hours. When beans are tender (about 6 hours) remove 1 cup of beans and mash them up and then stir back in the mashed beans. To darken up the beans remove cover the last hour (Same time you add the mashed beans). You may want to add more molasses for extra flavor. Serves 16.
