Parmesan Cod Fish Recipe


1/2 cup corn flake crumbs
1/2 cup grated Parmesan cheese
1 tsp. salt
Pinch pepper
14 oz. cod fillets, thawed Flour
1 egg, lightly beaten

Combine crumbs, cheese and seasonings. Coat fish with flour and dip in beaten egg. Coat evenly with crumb mixture and place in a single layer in a well greased or foil-lined shallow baking dish. Cover lightly with foil. Bake at 375 degrees for 20-30 minutes or until fish is tender. Suggestion: For extra crispiness, bake fish uncovered for a shorter period of time.
