3 pounds caribou ribs, cut in pieces
1 cup catsup
2 tablespoons vinegar
2 tablespoons brown sugar
1 teaspoon salt
1/4-pound salt pork, diced
1 tablespoon prepared mustard
2 tablespoons lemon juice
1 onion, chopped
1/4 teaspoon pepper
Brown ribs in salt pork. Place in casserole and cover with barbecue sauce. Bake at 325 for 2 1/2 hours. Baste sauce over ribs frequently. Delicious served with rice.
