Christmas Rum Cake Recipe

Christmas Rum Cake Recipe:

4 cups flour
2 tsp baking powder
3/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/4 tsp mace
1/4 tsp cloves
1 1/4 cups brown sugar
19 oz can fruit cocktail, drained
1/3 cup strong coffee
1/4 cup molasses
9 eggs
1 lb butter
4 oz dark rum
1 pkg raisins
1 cup currants
2 apples, peeled and chopped
2 oranges, peeled and chopped
8 oz red cherries
8 oz green cherries
1 cup walnuts, chopped
8 oz mixed peel
1 cup dates, chopped
8 oz mixed fruit

Mix all dry ingredients together; add to fruit. Beat eggs, butter and brown sugar together, then add liquid ingredients.

Mix dry ingredients and liquid ingredients alternately, until all ingredients are mixed together.

Grease and line with wax paper two 8-inch baking pots.

Bake in preheated oven at 275F for 2 1/2 to 2 3/4 hours
