Traditional Newfoundland Old Fashioned Christmas Cake Recipe

8 oz. plain flour
8 oz, currants
1/2 tsp. spice
8 oz, raisins
1/2 tsp, nutmeg
3 oz. glazed cherries
8 oz. butter
3 oz. candied peel
8 oz, brown sugar
2 oz. blanched almonds
4 eggs
3 tsp. lemon juice
8 oz. sultanas
grated rind of 1 lemon
pinch salt
3-4 tsps. brandy (optional)

Grease and line a 7 inch square or 8 inch round tin with a double thickness of greased grease-proof paper.

Sieve flour, salt and spices. Cream the butter and sugar together until light and fluffy. Beat the eggs into the creamed mixture. Fold in flour; add lemon juice and rind. Stir in the prepared fruit and nuts, mix all well together and pour into tin.

Bake in oven at 290 degrees F, Cooking Time: 4-1/2 to 5 hours

Allow cake to cool before removing from tin, Spoon brandy over it and allow to soak in (optional).

When cold, wrap in grease-proof or foil and store in cool place until required. Coat with icing or decorate if desired.
