
- 4 oz, plain flour
- 1-3/4 tsps. cinnamon
- 3 oz. butter
- pinch salt
- 4 oz. castor sugar (superfine sugar)
- blanched almonds to decorate
- 1 large egg
Set aside white of egg, 1 oz. of sugar and 1 tsp of cinnamon for glazing. Rub butter into the flour with your fingertips till mixture is like fine breadcrumbs. Add egg yolk, sugar, salt and the spice. Mix dough with a wooden spoon and knead lightly until smooth,
Roll out dough 1/4 inch thick, cut out biscuits with a 1-1/2-inch pastry cutter. Brush the top of the biscuits with the egg white to which 1 oz. of sugar and 1 tsp of the spice has been added. Place one blanched almond on each biscuit. Bake on a lightly greased pan in a slow oven 335 degrees F. until golden. Cooking time: about 15-20 minutes
