Pickled Beets

Boil beets until tender and then peel them.

Cut beets to desired size and shape.

For each quart of beets add the following in a pot with the beets:

  • 1 1/2 cups brown sugar
  • 1 teaspoon salt
  • 3/4 cup vinegar
  • 3/4 cup water
  • Beets

Then heat beets in this mixture until they boil and then fill hot sterilized jars and seal them.

Pickled beets are a delicious addition to salads, sandwiches, or as a side dish. They can be enjoyed for several weeks when stored in the refrigerator or bottle them for longer storage. Remember that you can adjust the seasonings and spices to your taste. Feel free to get creative and experiment with different flavors to make these pickled beets uniquely yours!
