Pickled Beets

Recipe:

Boil beets until tender and then peel them.

Cut beets to desired size and shape.

For each quart of beets add the following in a pot with the beets:

  • 1 1/2 cups brown sugar
  • 1 teaspoon salt
  • 3/4 cup vinegar
  • 3/4 cup water
  • Beets

Then heat beets in this mixture until they boil and then fill hot sterilized jars and seal them.

Pickled beets are a delicious addition to salads, sandwiches, or as a side dish. They can be enjoyed for several weeks when stored in the refrigerator or bottle them for longer storage.
