Beet Salad Recipe

  • 5 lb. potatoes
  • 1 cup mayonnaise
  • 1 onion, chopped.
  • 2 cups picked beets
  • 1 cup diced apple.
  • 1 tsp. sugar

Mash potatoes and beets together. May add more beet juice, if needed. Combine mayonnaise, sugar and chopped onion. Add to the potato and beet mixture. Add the chopped apple and blend together. Do not place in refrigerator beet salad until cool.

    Hi, looks delicious! But you don’t say anything about cooking! I assume the potatoes are boiled and then mashed. What about the beets? Do you bake them?
