Cod Quiche Recipe:
1 unbaked pie shell
2 eggs, well beaten
1-1/2 cup cooked flaked cod
1/2 cup milk
1/2 cup Mozzarella cheese
1/4 cup sliced mushrooms
3 tbsp. minced celery
1 tsp. chives
Mix ingredients together and pour into pie shell.
Garnish with thin slices of tomato.
Bake at 400 degrees for 10 minutes, then reduce heat to 350 degrees and continue cooking until a knife inserted in the middle comes out clean.
